'Solo di Bruna’ or solely from Brown cows is unlike any other Parmigiano. Made in incredibly
small batches (just nine wheels a day!), It's richer, rounder, and more buttery than its counterparts, with a crunch that is hopelessly addictive. After 24 months of careful aging, Solo di Bruna develops an intense caramel sweetness balanced by toasted nuttiness. Toss the rind in your soup, grate mounds atop your pasta. Pair this with a Barolo or other Nebbiolo.
